EGG SCRAMBLE:
2 eggs.
2 tablespoons heavy cream.
2 tablespoons diced bell pepper.
Handful of spinach.
Whisk together eggs and heavy cream. Season with salt and pepper..
Pour onto a pre-heated, skillet greased with bacon grease. Cook over medium low heat. Let set for 30 seconds. Then drag a spatula down the middle and around the sides to scramble.
INSTANT POT HARDBOILED EGGS.
12 eggs.
1 cup of water.
Lay down the trivet on your instant pot liner. Add the eggs. Pour in 1 cup of water. Close the lid and pressure cook on high for 5 minutes..
Let the pressure release naturally for 5 minutes before released the pressure manually..
Immediately transfer eggs to an ice bath and let sit for 5 minutes before storing or peeling..
RASPBERRY FLUFF.
Raspberries.
4 oz cream cheese.
½ cup heavy cream.
2 tablespoons monkfruit.
1 teaspoon vanilla.
Add ingredients to a blender and blend until smooth..
CHICKEN THAI ALMOND STIR FRY.
2 cups diced vegetables.
2 cups sliced pre-cooked chicken.
¼ cup Thai Almond Sauce (see link above).
Add leftover bacon fat into skillet over medium heat. Add vegetables and saute until soft..
Add chicken and cook until heated through. Add sauce and stir to combine..
AVOCADO SMOOTHIE.
1 avocado.
½ cup strawberries.
1 cup macadamia nut milk.
1 tablespoon monkfruit.
Add to blender and blend until smooth.
AVOCADO EGG BOATS.
1 avocado.
1 egg.
Slice avocado in half and scoop out additional 2 tablespoons of avocado to allow for more room for the egg. Crack the whole egg inside the avocado or crack into a dish and add separately. Season..
Bake at 350 degrees for 20-25 minutes..
CREAM CHEESE CELERY.
2 stalks of celery.
2 oz of cream cheese.
Everything Bagel Seasoning.
